Two trades dominate what gets asked for in Southwark, and they need opposite handling. The Borough Market food scene runs on a clock: a stall or a kitchen is either serving or it is not, so photography belongs in the gap, early with the shutters still down or in whatever lull the day concedes. None of that is negotiable, which means the hour gets agreed first and the pictures get designed around it. The cultural quarter along the South Bank works the other way round. Arts and heritage organisations keep buildings open to the public, so the constraint is not trading hours but visitors, and any frame needing an empty room belongs before the doors unlock. The lighting problem in both is identical, and darkness is not what it is. Trading light is aimed at goods. It arrives from above and points down onto a counter, which is exactly wrong for a face: the forehead goes bright, the eyes go dark, and no amount of work afterwards puts them back. A team photographed against one agreed surface, inside one visit, with the arrangement noted down, can absorb next year's arrivals without the page falling out of step. That note is the whole trick, and writing it takes a minute at the time.
